Do you wake up in the morning craving sweets? If so, I’ve got the the perfect breakfast for you! Blueberry lemon cheesecake overnight oats will start your day on a healthy and sweet note. Make multiple jars so you have breakfast on hand for the entire week. Use a 4-oz jelly jar for a single serving or double the recipe and use a pint-sized jar.

Ingredients

  • 1/4 cup blueberry Greek yogurt
  • 1 oz cream cheese (low fat)
  • 1/4 tsp lemon zest
  • 21/2 tsp lemon juice (divided)
  • 1/2 cup oats
  • 1/2 cup 1% milk
  • 1/2 cup blueberries (divided)
  • 1/2 tsp vanilla extract
  • 1/2 tsp honey

Instructions

  1. In a small bowl, combine yogurt, cream cheese, lemon zest, and 1 tsp lemon juice. Set aside.
  2. In an empty jelly-sized (4oz) mason jar, add oats, milk, 1/4 cup blueberries, vanilla, honey, and 11/2 tsp lemon juice. Stir the oat mixture and top with the Greek yogurt and cream cheese mixture. Seal jar.
  3. Refrigerate overnight. When ready to eat, remove top, top with additional blueberries and lemon zest and enjoy.
