Ingredients

1 cup shelled boiled peanuts (such as Peanut Patch)*

2 Tbsp tahini

2 Tbsp lemon juice 

2 cloves fresh garlic

2 Tbsp oil of choice (ie. peanut, olive, etc.)

¼ tsp ground cumin

¼ cup water or liquid from boiled peanuts

Instructions

    1. Drain peanuts reserving liquid for later use. Remove outer shells
    2. Combine first 6 ingredients in a food processor. Blend until smooth. If needed, add water or peanut liquid 1 tablespoon at a time until desired consistency is reached. Serve with crackers, fresh pita wedges or vegetables.

Notes

*Shell 2 (13.5 oz) cans of boiled peanuts to yield around 1 cup of shelled boiled peanuts.

Store in an airtight container in the refrigerator for up to 48 hours. 

To make Spicy Boiled Peanut Hummus, choose the canned variety of spicy or Cajun boiled peanuts. (So easy!)
