Carrot Cake Smoothie

While the Christmas and holiday season usually brings with it piping hot bowls of homemade chili and cups of hot chocolate or tea, I wanted to throw a different kind of recipe at y’all today – one for a Carrot Cake Smoothie!

The holiday season has officially hit us, guys! Thanksgiving has already come and gone, and we are already 2 days into December, can you believe it? Seriously, is anyone else completely astounded that Christmas is a mere 23 days away? Where has 2015 gone? I know I can’t be the only one asking that question!

I know, you’re probably thinking I’m crazy, right? Temperatures are dropping, and I’m trying to convince you to whip up an ice cold smoothie?? It may sound crazy, but I promise it’s worth it to throw on an extra layer of clothes to sip on this sweet treat.

Whether enjoyed as a snack, as part of a meal, or as a sweet treat, I’ve found that smoothies are a great way to sneak in a couple extra servings of fruits and veggies in my diet. I’ve always been a fan of adding in some spinach or kale to my smoothies for that extra boost, but recently wanted to explore adding in different vegetables to change up the flavor profile a bit, while still benefiting from the vitamins and minerals that veggies offer. While perusing my fridge one afternoon, I scanned across a bag of shredded carrots. I lit up at the thought of warm, moist carrot cake, which in turn led to an even brighter lightbulb going off in my head.That was the flavor profile change I was looking for!

THE CARROT CAKE SMOOTHIE FORMULA

I think this was one of the easiest recipes to throw together, and I can almost guarantee that you have all of the ingredients in your pantry or fridge already. While it may not be the real deal like fresh homemade carrot cake is, it is a tasty, quick and healthy alternative that offers a very similar taste.

Some notes:

  • Feel free to add in a handful of ice cubes if desired.
  • You can easily substitute plain greek yogurt for any flavored yogurt, though it may add some change to the flavor profile.
  • Any type of milk would suffice: almond, cashew, cow’s, or soy!
  • If you don’t have shredded carrot, you can also use carrot chips or finely chop carrots by hand.

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 banana (frozen)
  • 1/2 cup vanilla almond milk
  • 3/4 cup shredded carrot
  • 1/4 teaspoon ground cinnamon
  • pinch of ground nutmeg

Instructions

  1. Place all ingredients in blender and blend until well incorporated to desired consistency.
