Christmas Breakfast Snowman Pancakes

It’s no mystery that pancakes are a favorite in this household. My crew is Team Sweet when it comes to breakfast (like these Breakfast Cookies) so I do what I can to make sure wholesome ingredients are included. However, this means I need to keep an eye on the added sugar at breakfast so we don’t experience a crash midmorning. While this Pancake Snowman (pictured) looks like he got caught in a blizzard of powdered sugar (thank you, Ellie!), it is possible to enjoy this easy breakfast without worrying about the midmorning slump. By using a small dusting of powdered sugar, a squirt of whipped cream and just a few chocolate chips, it is still possible to have less sugar than the massive amount of syrup my girls always want use. Plus, choosing a whole grain pancake and serving it alongside a glass of milk will help to add fiber and protein (respectively).

All you need to make this SUPER SIMPLE snowman breakfast is cook/heat your mini pancakes then assemble on a plate. If you choose to make your own mini pancakes, you definitely can do so using your favorite recipe. We usually make our own but I always have a box of frozen whole grain pancakes in the freezer for when I’m in a pinch. Let your kids assemble the buttons and scarf and you’re ready to eat. A yummy option and simple swap would be to use berries instead of chocolate chips for the buttons and eyes. Whichever you choose, make it fun because you know it is going to taste delicious!
