Simple Skillet Lasagna Recipe – One pan and 30 minutes is all you need to create a delicious family dinner recipe that is sure to become a staple in your house. This healthy lasagna meal is loaded with four different veggies and uses three types of cheese making it the ultimate comfort food casserole. 



  • 2 tablespoons olive oil
  • 1/3 cup diced onion
  • 1/3 cup finely chopped zucchini
  • 1/3 cup finely chopped bell pepper
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 1 lb extra lean ground beef
  • 1 cup part skim ricotta cheese, divided
  • 6 oven-ready lasagna noodles (broken into large pieces)
  • 1 14.5-oz can petite diced tomatoes
  • 1 14.5-oz can crushed tomatoes
  • ¾ cup shredded part skim mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves, optional


  1. Heat olive oil in a large skillet over medium high heat. Cook onion, zucchini and bell pepper about 3 minutes or until vegetables begin to soften. Add garlic, Italian seasoning and salt.
  2. Crumble meat into pan with sautéed veggies and cook until meat is browned. Once the meat has cooked through, drain any liquid that has accumulated in the pan.
  3. Spoon ½ cup ricotta cheese over the top of the beef. (It is easiest to dollop spoonfuls of ricotta evenly over the beef versus trying to spread it.) Top ricotta cheese with the broken lasagna noodles allowing noodles to overlap as needed.
  4. Pour crushed tomatoes and petite-diced tomatoes over noodles. Cover and bring to a boil. Once the pan is boiling, reduce heat to medium-low and simmer for 20 minutes until noodles are softened.
  5. Spoon the remaining ricotta over the noodles and tomatoes. Sprinkle evenly with mozzarella and Parmesan. Replace lid and allow cheese to melt.
  6. Remove from heat. Garnish with basil, if desired.
