Hi everyone! I wanted to share a delicious recipe that a nutrition student at the University of Alabama shared with me. I thought it was so simple and delicious that you might enjoy for an easy summer dinner. I’m all about Caprese anything and everything and I love how Caroline added avocado to the salad for a dose of healthy fat as well as some grilled chicken for protein.

“Hi! My name is Caroline Hughes and I am a nutrition student at the University of Alabama finishing up the Coordinated Program in Dietetics this upcoming spring. This summer I am so excited to be working with Holley! I wanted to share one of my favorite recipes with all of you.
