  • 2 cups mixed greens
  • ½ ripe avocado (peeled and sliced)
  • 1 medium tomato (sliced)
  • 1 oz. Mozzarella cheese (sliced)
  • cup ½grilled or rotisserie chicken (chopped)
  • ½ tsp. dried basil
  • 1 Tbsp. balsamic vinegar
  • 1 tsp. olive oil
  • salt and pepper (optional)


  1. Place mixed greens, avocado, tomato, mozzarella, and chicken on a plate.
  2. In a small bowl, mix olive oil, balsamic vinegar, and dried basil.
  3. Drizzle oil and vinegar mixture over salad. Add salt and pepper to taste.
