Description

This simple stovetop shakshuka recipe, Easy Skillet Shakshuka, uses one skillet and cooks up a showstopping breakfast, brunch or dinner in less than 30 minutes.

Ingredients

  • 2 Tbsp olive oil
  • 1 cup onion (about 1/2 medium)
  • 2 Tbsp minced Garlic (about 2 large cloves)
  • 1 lb extra lean ground beef (I used 93/7)
  • 1 Tbsp cumin
  • 1 Tbsp smoked paprika
  • 1/2 tsp kosher salt
  • 28 oz can diced tomatoes
  • 46 large eggs
  • Optional: chopped cilantro, chopped green onions, avocado slices, lime wedges
  • crusty bread

Instructions

  1. Heat a large skillet* over medium-high heat. Add oil, swirl to coat, then add onion and saute 3 to 5 minutes or until soft. Add garlic and cook another 30 seconds stirring to combine. Add ground beef and cook 7 to 10 minutes or until beef is browned. Add tomatoes to the skillet, stir, and cook 5-7 minutes or until liquid is slightly reduced.
  2. Use a spoon to make 4-5 wells in the beef and tomato mixture assuring that they are evenly spaced out. (Note that the number of wells will be dependent on the width of your skillet.) Crack one egg into the center of each well being careful to avoid breaking the yolk. Reduced heat to low, cover and cook 5 to 7 minutes or until the whites are set but the yolks are still runny.
  3. Top shakshuka with desired toppings such as chopped cilantro, green onion, avocado slices or a squeeze of fresh lime juice. Serve immediately with crusty bread.

Notes

*Choose a large, wide skillet to give you more surface area to cook more eggs.
