This fun twist on a breakfast sandwich is the perfect amount of nutritious, delicious, and a little bit of spooky too. It’s the perfect dish to serve up to the little ones on Halloween morning, or really any fall morning. It’s even fun to have them help out and construct their own sandwiches.

  • 4 round toaster waffles (I used Eggo)
  • 2 large egg, scrambled
  • 4 slices cooked bacon
  • 4 chocolate chips
  • 2 Tbsp maple syrup, optional

  1. Toast waffles according to package directions until crispy and golden brown.
  2. While waffles toast, crack eggs into the center of the a nonstick skillet and scramble until cooked all the way through. Remove from pan.
  3. Slice the bacon pieces into quarters, small enough to resemble “spider legs” and set aside.
  4. Divide scrambled egg in half and place on top of two waffles. Top with bacon slices (four pieces on each side to look like legs). Add the second waffle on top and top with 2 chocolate chips for eyes. Drizzle with maple syrup, if desired.
