Is the secret to happiness as easy as eating more fruits and veggies? According to science, this very well may be true. Regardless of the type – fresh, frozen, canned, dried or 100% juice – fruits and vegetables have unique properties that hold the key to happier, healthier lives.


Consider this though, nearly 90% of the U.S. population falls short of meeting the recommended servings of vegetables for the day and 85% are not meeting the recommendation for fruit. Wow! Those stats make me feel grumpy just thinking about them!

As a wife and working mom to two busy little girls, I have to admit that despite my best efforts, meal planning isn’t always my forte. I can’t tell you the number of nights we resort to takeout because pulling together a nutritious meal is really just too much. As a mom, this really starts to weigh on me…especially because I know the benefit of fruits and veggies and how much we all need them.


Thankfully, I’ve been working to get ahead of the daily grind and am keeping my ‘cantry’ stocked with a variety of fruits, vegetables, legumes and protein sources from canned foods. I’ve found that when I am equipped with a variety of canned foods, I can always create a fast and nutritious meal that my family will love in no time. This is just another reason why I’m so excited to share the Happiness Challenge with you.

My 5-Day Happiness Challenge Journey

I tried cooking a healthy diet with canned foods for every meal for five days. The result? My stress level significantly decreased. Because canned foods are already prepped, I was able to up my meal-prep game and serve my family wholesome, tasty recipes, and get back to quality family time.


Knowing which meals I would make each day and having the ingredients on-hand made meal prep so much faster and easier. Together, we made recipes like White Chicken Chili, Carrot Muffins, Salmon Burgers, Greek Pizza and Baked Chicken Taquitos. The girls have continued to ask for these dishes even though we’ve finished the challenge. Plus, some of the recipes made enough food that I could enjoy for lunch the next day or two (because who doesn’t love leftovers!).
