October 11, 2013 Healthy Lunchbox
It’s breakfast for lunch today! We don’t have to worry about nut allergies in our classroom so I made a whole wheat waffle sandwich with peanut butter and cinnamon and paired with blackberry Greek yogurt, grapes, and milk. For those of you that are looking for nut-free solutions, consider seed butters and soy butters.
With the sandwich, consider adding honey or 100% fruit spread for additional flavor. You can also sprinkle with flax seed for a boost of nutrition. This meal was a cinch to make and took less than 5 minutes.
Today’s 5-minute lunchbox:
1 whole wheat waffle spread with 1 tbsp peanut butter and sprinkled with cinnamon
1 cup blackberry Greek yogurt
1 cup grapes
Milk
