Fast forward just a few years and this superstar ancient grain is now the darling of the culinary world popping up in cereals, snack bars, and restaurants sides across the country. Known for being a high-quality protein (meaning it has all of the essential amino acids you need) as well as a gluten-free source of fiber and iron, it’s a delicious and versatile way to get your servings of whole grains.
