Asparagus prices are going down which means spring is here (well, almost). We’ve had the benefit of gorgeous 70+ degree weather in Birmingham over the last few days so my husband and I decided to have friends over to cookout this weekend to celebrate the warmer temperatures. On the menu was grilled pork tenderloin, roasted fingerling potatoes, and three pounds of grilled asparagus to feed the crew. Like most grilled veggie recipes, the beauty is in the simplicity–toss fresh asparagus in a little oil to evenly coat, season as desired (ie. salt, pepper, garlic powder, Italian seasoning, cayenne, cumin, etc.), and grill on medium heat until tender. I usually finish off with a squeeze of fresh lemon juice or a drizzle of balsamic vinegar as a final flavor enhancer.
