Have you ever eaten chili out of an individual bag of Fritos? Have you ever made “walking tacos” in a Doritos bag? Well, I have another idea for you…Walking Rice Bowls! My friends at Uncle Ben’s created the concept and have made some fun variations on a pizza rice bowl, a buddha rice bowl and more. I played around with this concept and created a simple portable rice pouch recipe for when you’re on-the-go. 

As a dietitian, I’ve been programmed to encourage people to sit down when they eat, take small bites, eat slowly and mindfully, and listen to their bodies. But let’s be realistic…one of the most common questions asked is what to prepare for dinner when you’re in a hurry. Parents are tired of eating takeout in the car between practices and lessons. Thankfully, this walking rice bowl recipe is the answer!

Individual Sweet and Sour Chicken Rice Bowls take minutes to make from start to finish. And, they’re a good way to use up leftovers. Plus, it uses just a few flavor and nutrient-packed ingredients. If you’ve ever had a hankering for some sweet and sour chicken but didn’t have enough time to order delivery, pick up takeout or dine in at a Chinese restaurant, I’ve found your solution!

Just stir together cooked chicken, chopped bell peppers, chopped green onions, pineapple chunks and sweet and sour sauce. And while, yes, I know we could make our own sauce, this recipe is all about taking shortcuts. Plus, you can use extra sweet and sour sauce to make Slow Cooker Sweet and Sour Meatballs the next day. Spoon the chicken mixture into a just-cooked microwaveable brown rice pouch and you’re walking rice bowl is done.

Speedy Sweet and Sour Chicken Rice Bowl

  • 1 8.8-oz pouch precooked whole grain rice (such as Uncle Ben’s Microwaveable Ready Rice)
  • 2 ounces chopped cooked chicken breast (warmed, about 1/3 cup)
  • 3 Tbsp green and red bell pepper strips
  • 3 Tbsp pineapple chunks
  • 1 Tbsp sweet and sour sauce
  • Optional: chopped green onions


  1. Cook rice according to package directions.
  2. Toss chicken, bell pepper, pineapple and sweet and sour sauce in a small bowl. Add chicken mixture to the cooked rice pouch. Sprinkle with sliced green onions, if desired. Serve immediately.
