Moment of truth…selfishly, I created these Instant Pot Sous Vide Egg Bites with smoked gouda and ham for myself after I tasted one of my favorite coffee shop’s newest breakfast offerings (Bacon and Gruyere Egg Bites). My fluffy and flavorful egg bites made in the pressure cooker and are a fun spin on what the coffee shop serves. However, they are more affordable, ready in less time than it takes to drive to and wait in the drive thru at the coffee shop and more nutritious because they use Eggland’s Best eggs. You see, compared to ordinary eggs, Eggland’s Best has more than double the vitamin B12, ten times the amount of vitamin E, and six times more vitamin D. Plus, it has 25% less saturated fat. The great news is that Eggland’s Best also has the best flavor.
With this recipe, everyone in the family can customize their egg bite(s) to fit their favorite tastes. Whether you choose to go all out veggie, stick with a classic flavor combo like sausage and cheddar cheese (Brent’s favorite) or get creative with a Mediterranean-inspired batch featuring tomatoes, basil, spinach, olives and feta, the options are endless. If you’re scratching your head as you read this thinking “seuse who?” then you’re not alone. Odds are that if you aren’t familiar with this French style of cooking (pronounced soo veeD) then the first time you drove up to the coffee shop window you likely got nervous and just ordered the “egg bites.”
No worries! I’ve been there too. Without digging too deep into cooking techniques, food science, etc., sous vide cooking is when food is added to a plastic pouch or glass jar and cooked in steam or a water bath at a precise temperature (usually for a longer amount of time than it would normally take to cook).
However, I’m using the Instant Pot (electric pressure cooker) to quickly steam the eggs in a similar style as sous vide cooking but much faster. This method allows the egg bites to be light, fluffy, airy and perfectly cooked.
