We’re big on holidays around here. We set up Easter trees, celebrate birthweeks instead of birthdays, and have pretty much the loudest Christmas Eve festivities you can imagine, so it shouldn’t surprise you that I’ll jump at any chance to celebrate, especially if it involves a favorite ingredient of mine: Cheese! Happy National Grilled Cheese Month, everyone! Oh you didn’t know? Well now you do, and the great news is that dinner is pretty much already done.

You can always celebrate this super important holiday with the classic sandwich featuring white bread, American cheese, and a little butter, or you can have fun with it by making a few simple swaps and make one of my favorite recipes this spring: Pesto Grilled Cheese Roll-Ups.

I love using fresh basil to make my own pesto; it’s easy and crazy flavorful. Check your local gardening store or produce aisle for potted herbs—they can be a fraction of the price of a single package of precut herbs! If you’re tight on time, store-bought pesto works just fine, too.

Roll ups are a genius way to serve the same basic dinner about 400 different ways. If you have picky eaters, then pin this idea right now! You can set up a rolling station and let everyone pick the fillings, toppings, and bread that sound best to them. One of my kids is Team Tortilla PBJ all the way and one is Team Turkey & Swiss. I’m just happy they’re having fun in the kitchen and putting good food in their bellies.

Pesto Grilled Cheese Roll-Ups

If your kids are like my girls, they’ll try anything if you give it a fun name. Instead of serving soup and sandwiches (ho hum!), serve a favorite soup like Kid Friendly Pizza Soup alongside grilled cheese “dippers.” My kids love the Pesto Grilled Cheese version, but you can always leave the pesto out if they prefer the classic sandwich.

Break out the bread, spread the toppings, and get ready to celebrate with the ones you love best!
