Fun Twist on Traditional Tacos

I love an excuse to make dinner (and dinner prep!) fun which is why these Mini Taco Cups are always a hit with my family on Taco Tuesday (or any night of the week). 

My crew loves any recipe that they can customize at the table. These taco cups allow you to load up on your favorite ingredients and skip the ones you aren’t crazy about. When I’ve made traditional tacos, my girls have skipped the diced raw onion but will add shredded lettuce, diced avocado and even salsa. This is a great way to use up ingredients/toppings that you have on hand. Plus, the recipe earns big bonus points for coming together from start to finish in less than 30 minutes. 

And for those of you that need a dinner option when you’re coming home late from the ballpark…these taco cups can be made ahead. Simply prep the taco mixture ahead of time, then when you’re ready to eat, fill the wonton cups and bake.

Why I love using lean beef in my Mini Taco Cups

This recipe has some low-key dicing that goes along with it, which is the perfect excuse to get the girls into the kitchen to practice their chopping skills. I find that one key point will always stick with them so for this recipe I’m picking the mantra that the protein in beef helps to make them strong.

In fact, growing children need high-quality protein, iron, zinc, and vitamins B6 and B12—all essential for their growth and development. For me, beef is an easy choice. It’s my go-to protein when I want to give my family big flavor and essential nutrients. Plus, it’s delicious, versatile and has so many lean options

How to Make Mini Taco Cups

Lean Ground Beef in Skillet

1. Brown lean ground beef. Drain, if necessary then stir in diced tomatoes and seasoning. 

 

 

Wonton Wrappers in Muffin Tin

2. While beef cooks, press wonton wrappers into a muffin tin. Be sure to spray tin with cooking spray to avoid sticking.  

 

Fill Taco Cups with Meat and Cheese

3. Fill each cup with ground beef mixture and top with cheese.

 

Bake Mini Taco Cups until golden brown

4. Bake until wonton are golden brown and cheese has melted. Customize with your favorite taco toppings such as sour cream, avocado, lettuce, olives, cilantro or salsa.

Ingredients

  • 1 pound lean ground beef (90/10 or 93/7)
  • 1 (10-oz) can mild diced tomatoes with green chilies (such as Rotel)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 24 wonton wrappers
  • 3/4 cup shredded Mexican-blend cheese
  • Optional taco toppings: diced avocado, sour cream (or Greek yogurt), chopped tomatoes, diced onion, chopped cilantro, salsa, guacamole, olives

Instructions

  1. Cook ground beef in a large skillet over medium-high heat until browned. Drain, if necessary.
  2. Stir in diced tomatoes then add chili powder, cumin, salt and pepper. Stir to combine.
  3. While the beef cooks, spray 12 muffin cups with cooking spray. Line each muffin cup with two wonton wrappers. Fill each cup with 3 tablespoons of cooked beef mixture. Top each cup with 1 tablespoon cheese.
  4. Bake at 375F for 10-13 minutes or until wontons are golden brown and cheese has melted. Top with your favorite toppings.
