Family Favorite Pancake Muffins

  • 2 cups pancake mix prepared according to package directions (use milk instead of water)
  • 1 large egg
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Optional toppings: Tropical (mango, coconut), Chocolate Walnut, Blueberry, Bacon Cheddar


  1. Preheat oven to 400 degrees.
  2. Prepare pancake mix according to package directions or recipe directions.
  3. Add 1 egg, maple syrup, cinnamon, and vanilla extract stirring until combined.
  4. Spoon batter info muffin cups that have been lined with paper or silicone liners or sprayed with cooking spray filling 2/3rd cups full.
  5. Add desired toppings (about 1-2 Tablespoons each). Gently stir each muffin with a wooden pick to mix toppings into the muffin.
  6. Bake at 400 degrees for 13 to 15 minutes or until a wooden pick inserted in the center of the muffin comes out clean.
  7. Cool in pan 1-2 minutes then transfer to a wire rack.


For most pancake mixes, the directions use 1 cup of mix and then give required ingredients to make the batter (water, milk, eggs, oil, etc). In this case, double the recipe so you are using 2 cups of pancake mix and double the amount of ingredients needed to make the batter. Add one egg, maple syrup, cinnamon, and vanilla and proceed…
