Autumn Salad with Chicken, Apples and Beets

Toss together your favorite fall ingredients like crispy apples and crunchy beets to create this simple autumn salad for a simple and nutritious lunch.

Do you ever order certain foods at restaurants more often than you make them at home just because they taste better when made by someone else? I often do this when it comes to salads. For some reasons, the ones I make at home just don’t have the WOW factor that I like in a salad and always need some improvement. However, this Autumn Salad with Chicken, Apples and Beets is the exception to the rule.

When it comes to dressing, just use what you like! I love whipping together a quick homemade balsamic vinaigrette but sometimes bottled just has to do (and that’s okay too!).

The best thing about this salad is the ease in which it comes together. While roasting beets isn’t difficult at all, I like using the precooked beets (like the steamed beets in the produce department from Melissa’s or Love Beets) for a speedy and equally yummy option. Use leftover roasted chicken, crunchy and sweet Honeycrisp apples and toasted almond slivers.

Ingredients

  • 4 cups mixed greens
  • 6 ounces cooked chicken breast (sliced)
  • 2 steamed baby beets (sliced (I used Melissa’s Steamed Baby Beets))
  • 1 medium honeycrisp apple (chopped)
  • 2 tablespoons slivered almonds
  • 2 tablespoons feta cheese
  • 12 tablespoons balsamic vinaigrette

Instructions

  1. Combine first 6 ingredients in a salad bowl. Drizzle with vinaigrette.
