When time is tight but you are in need of something sweet, why not turn to one of these simple and super fast shortcut summer dessert?

The beauty of the summer is that sweet produce abounds like berries, watermelon, peaches and more. As you know, I’m all about taking a shortcut when I can to make life easier as long as it still has a focus on healthy and delicious eating. That’s why I’m shared my favorite shortcut summer desserts recently on Birmingham’s ABC 33/40 Talk of Alabama and why I’m rounding them up for you here.

What great about these “recipes” is that they can easily be customized based on what you have on-hand and aren’t even necessarily a recipe as much as a doable, practical and super delicious idea. Let me know what you think!!


Pomegranate Macerated Berries

Combine 1 cup pomegranate juice with 1 teaspoon of lemon juice and 1 tablespoon of sugar. Stir in 2 cups of berries. Refrigerate 20 minutes to 8 hours. Serve over ice cream or Greek yogurt.


Mason Jar Blackberry and Peach Shortcakes

Layer Greek yogurt, cubed angel food cake or pound cake, fresh blackberries and sliced peaches in a Mason jar. Repeat layers and seal jar. Refrigerate for 1 hour or up to 2 days.


Frozen Watermelon Pops

It doesn’t get any easier than this! Cut watermelon into triangle shapes. Cut a small slit in the center of the rind on each triangle and insert a craft stick. Freeze. You can’t beat these naturally sweet, NO DRIP pops!
