1. Pomegranate Macerated Berries

Easy Summer Shortcut Desserts

Just a few simple steps and ingredients are all you need to make this simple and sophisticated dessert. Serve in a wine or martini glass for an impressive presentation. In case you didn’t know, “macerated” means to soften by soaking in a liquid. So, the berries soften and release their sweet juices into the already sweet, tart pomegranate juice. The flavor combo is out of this world!!

  1. Combine 1 cup pomegranate juice with 1 teaspoon of lemon juice and 1 tablespoon of sugar.
  2. Stir in 2 cups of fresh berries. (Use your favorite combination of berries.)
  3. Refrigerate 20 minutes to 8 hours.
  4. Serve over ice cream or Greek yogurt.

Mason Jar Blackberry and Peach Shortcakes

Easy Summer Shortcut Desserts

Quite possibly one of my favorite make-ahead summer desserts are these Mason Jar Blackberry and Peach Shortcakes. They’re an easy summer dessert with few ingredients that you can customize based on what you have on-hand. For a festive make-ahead Patriotic dessert, use strawberries and blueberries in place of the peaches and blackberries. 

To make, simply layer Greek yogurt, cubed angel food cake or pound cake, fresh blackberries and sliced peaches in a Mason jar. Repeat layers and seal jar. Refrigerate for 1 hour or up to 2 days.

If you’re looking for an easy summer desserts for a crowd then it doesn’t get any easier than this! Cut watermelon into triangle shapes then cut a small slit in the center of the rind on each triangle. Insert a craft stick and freeze. You can’t beat these naturally sweet, NO DRIP pops! And if you’re family loves watermelon then don’t miss Sweet Heat Watermelon Salad or Tomato-Watermelon Salad
