15 Slow Cooker Vegetarian Entrees

When the leaves start to change and the temperature drops, I know it’s time to dig into the pantry and dust off my ever-faithful slow cooker. Each fall I ask myself why I don’t just leave it out year round as a permanent fixture on my countertop and each spring as the temperatures warm back up, I put it back into storage. One of these years I will figure it out! So here we are again in the middle of October and despite crazy hot temperatures for the last few weeks, I’m ready for some comfort food that only the slow cooker can deliver.

When I think of recipes made in the slow cooker, I immediately think of chilis and beef stews so I decided to mix it up a bit with a roundup of 15 vegetarian meals from across the web.
