Healthy Chocolate Chip Cookie Dough

When put to a blind taste test between the original (viral) edible chickpea cookie dough and our version, our healthy edible cookie dough won hands down. It features two secret ingredients giving it a delicious and rich raw cookie dough flavor that is so loved.

And best of all, it can be made ahead and stored in the refrigerator (although don’t expect it to be around for too long)!

Dippers for Edible Cookie Dough

Because the recipe uses graham crackers as part of the base, we love using graham cracker sticks as an obvious dipper. Equally delicious are pretzels for crunchy and salty contrast to the sweet dip.

Healthy Edible Chocolate Chip Cookie Dough

Description

The taste testers have spoken and this version is the winner! When put to a blind taste test between the original (viral) edible chickpea cookie dough and this version, our healthy edible cookie dough featuring chickpeas and graham crackers crumbs won hands down.

Ingredients

1 cup graham cracker crumbs (about 7 graham cracker sheets) *see note below

1 can chickpeas, drained, rinsed and patted dry

1/4 cup nut butter (preferably unsweetened)

1/4 cup brown sugar

1 Tbsp vanilla extract

1/4 tsp salt

2 Tbsp milk (if needed)

1/3 cup mini chocolate chips

Instructions

  1. Add graham crackers crumbs (*see note below), chickpeas, nut butter, brown sugar, vanilla and salt in a food processor. Blend until smooth. If needed, add milk until desired consistency is reached.
  2. Remove blade from food processor and transfer cookie dough mixture into a medium bowl. Gently stir in chocolate chips. Press plastic wrap firmly on top of cookie dough and refrigerate at least 1 hour.
  3. To serve, remove plastic wrap and serve cookie dough as a dip, roll into balls or eat with a spoon!

Notes

To make graham cracker crumbs, pulse graham crackers in a food processor to make a fine crumb.
