Healthy Edible Chocolate Chip Cookie Dough

Description

The taste testers have spoken and this version is the winner! When put to a blind taste test between the original (viral) edible chickpea cookie dough and this version, our healthy edible cookie dough featuring chickpeas and graham crackers crumbs won hands down.

Ingredients

1 cup graham cracker crumbs (about 7 graham cracker sheets) *see note below

1 can chickpeas, drained, rinsed and patted dry

1/4 cup nut butter (preferably unsweetened)

1/4 cup brown sugar

1 Tbsp vanilla extract

1/4 tsp salt

2 Tbsp milk (if needed)

1/3 cup mini chocolate chips

Instructions

  1. Add graham crackers crumbs (*see note below), chickpeas, nut butter, brown sugar, vanilla and salt in a food processor. Blend until smooth. If needed, add milk until desired consistency is reached.
  2. Remove blade from food processor and transfer cookie dough mixture into a medium bowl. Gently stir in chocolate chips. Press plastic wrap firmly on top of cookie dough and refrigerate at least 1 hour.
  3. To serve, remove plastic wrap and serve cookie dough as a dip, roll into balls or eat with a spoon!

Notes

To make graham cracker crumbs, pulse graham crackers in a food processor to make a fine crumb.
