While many people think of tomatoes as a summer staple (and, of course they are), I like to enjoy them year round – especially with this recipe for grape and cherry roasted tomatoes with thyme. Small tomatoes are juicy and sweet making them delicious for popping in your mouth. But, they also are divine when they are warm – especially by roasting – because the juices concentrate making them sweet and delicious. Plus, the options for how to serve herb-roasted tomatoes are endless.

Juicy and sweet, Campari tomatoes (smaller than a plum tomato but larger than a cherry tomato) are a favorite when it comes to roasting. I love preparing this variety when I plan to toss the tomatoes with pasta for a simple and quick weeknight dinner. Grape and cherry tomatoes are also a favorite because of their small size and concentrated flavor. Plus, they are the ideal size for piling on a crostini (see below for the recipe) or for popping in my mouth.
There are two methods when it comes to roasting tomatoes – slow and fast. Because convenience is always key for me, I default to the fast method 91/2 times out of 10. The method I share in this recipe allows ample time for the tiny tomatoes to concentrate their flavor, swell and slightly burst.
To quickly roast tomatoes, use a higher heat around 425 degrees F for around 10 to 20 minutes. For tiny tomatoes like grape, aim for the lower side of the range while larger roasting tomatoes like Campari require more time – up to 20 minutes. Note that for smaller tomatoes, you can leave these whole while larger tomatoes such as Campari or Roma usually work best when they are sliced in half.

2 pounds grape or cherry tomatoes
1 –2 Tbsp extra virgin olive oil
2 garlic cloves, minced
2 tsp fresh thyme leaves (about 5–6 sprigs)
1/2 tsp Kosher salt
1/2 tsp freshly ground black pepper
You can equally substitute fresh rosemary for fresh thyme for a flavor twist. Or try both!

Preheat broiler. Slice baguette into ¼-inch pieces and bake 3 to 4 minutes or until edges become golden brown. Remove from oven and spread with goat cheese, top with roasted tomatoes.
