● ¼ tsp salt
● ½ tsp baking soda
● 1 stick unsalted butter, softened to room temperature
● ½ cup light brown sugar
● 1 large egg
● 2 tsp vanilla extract
● 1 cup white chocolate chips, divided
● ½ cup dried cherries, coarsely chopped*
● ½ cup old fashioned oats**
● Striped, heavy duty paper straws
Instructions
- Preheat oven to 350F.
- Whisk together flour, salt, and baking soda in a medium bowl.
- Mix together butter and brown sugar in the bowl of a stand mixer for about two minutes until mixture is light and fluffy. (This step may also be done in a large bowl using an electric hand mixer.) Beat in the egg and vanilla. At a low speed, beat in the dry ingredients until just incorporated then beat in the ¾ cups white chocolate chips, dried cherries and oats until combined.
- Form the dough into 1 1/2-inch balls and arrange them 2 inches apart on 2 large baking sheets (about 6 to 8 balls per sheet). Insert one straw into the center of each dough ball.
- Bake for 13 minutes or until cookies are lightly brown.
- Let the cookies cool on the baking sheets for 2 minutes before transferring them to a rack to cool completely. If sticks shifted during baking, gently push them
