Ellie’s Lunchbox: September 27

Ellie’s Friday mothers’-day-out doesn’t offer refrigeration so I usually try to pack foods that can hold at room temperature (and aren’t a food safety risk) or I just add a freezer pack to her lunchbox. Her class is not peanut-free so peanut butter is always a good go-to room-temp option. Today, I spread natural peanut butter (she has no idea what the sugar-spiked PB tastes like) on a whole wheat tortilla and cut it into bite-sized squares. I have to be careful with her and peanut butter sandwiches because she tends to stuff her mouth with too many pieces resulting in a sticky mess! She seems to do okay with these peanut butter squares. I also added blueberries, red bell pepper strips and milk. I’ll be curious to see if the bell pepper comes home. She loves to eat it but I usually have some type of dip with it.

Today’s 5-minute lunchbox:
1 whole wheat tortilla spread with 1-2 tbsp natural peanut butter
1/4 cup blueberries
5 red bell pepper strips
Milk

Update:
Throwaway report: I knew better! I should have sent hummus–all but 1 of the bell pepper strips came home.
