Chocolate Chip Banana Bread Muffins

Last week I shared the exclusive recipe for my Chocolate Chip Banana Bread Muffins on Instagram but they are so good that I wanted to make sure I logged them onto my blog so they’re easy to pin and find at any time. Seriously, you’ll be so excited for your bananas to turn brown because you’ll want to make these muffins.

Because you need ripe bananas

But wait, if you want them now and your bananas are nice and ripe, worry not! I have a trick for you. Check out the instructions on how to ripen bananas in the oven in just 30 minutes. Foolproof and guaranteed perfect consistency for this recipe.

Mini Chocolate Chocolate Chip Banana Bread Muffins

My little banana bread lover, Ellie, asks me to make these muffins pretty much every day and at the rate that the girls eat them (and, okay, me too), they don’t stay around for long. For portion control reasons and to see if I could knock down the sugar and butter even more without losing the flavor or texture, I experimented with a mini muffin. (Note that reducing the sugar and butter from my original instagram post worked beautifully and that decrease is reflected in the quantity above.) The results? Pat myself on the back incredible. Seriously. There are just some recipes I make that I want to jump up and down and cheer and this is one of them.

If you want a fun spin, then try making these Mini Chocolate Chocolate Chip Banana Bread Muffins!

To make: follow all of the step above except add 1 tbsp unsweetened cocoa powder when you add the sugar and baking soda and spoon into 24 lightly greased mini muffin tins and bake for 15 minutes.

Chocolate Chip Banana Bread Muffins

Description

Take your basic banana bread to the next level with these moist and dense Chocolate Chip Banana Bread Muffins.

Ingredients

  • 3 very ripe bananas
  • 2 Tbsp butter (melted)
  • 2 Tbsp sugar (optional)
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 3/4 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup dark chocolate chips (may also use mini chocolate chips)

Instructions

  1. Mash bananas with a fork. Stir in melted butter and mix until combined. In a separate bowl, combine sugar (if desired), baking soda, salt, and flours. Add banana mixture to flour mixture and stir just until moist. Fold in chocolate chips.
  2. Spoon muffin mix evenly into lightly greased muffin cups.
  3. Bake for 20-25 minutes at 350 degreesF or until a wooden pick inserted in the center of the muffin comes out clean.
  4. Allow to sit in pan for 3-5 minutes before transferring to a wire rack to cool.
